摘  要:光瓶米香型白酒分别放置于低温避光、恒温恒湿、阳光直射、常温避光条件贮存,通过感官品评和理化指标的检测,研究不同贮存环境对光瓶米香型白酒质量的影响。结果显示,低温避光环境变化较小,阳光直射影响最大,出现了异味。本研究可为光瓶米香型白酒存放环境提供参考,酒体宜进行密封,干燥、避光保存。The plain bottled Mixiang Baijiu samples were stored under the conditions of low temperature and dark,constant temperature and humidity,direct sunlight,and normal temperature and dark.Through sensory evaluation and physicochemical indexes,the effect of different storage environment on the quality of plain bottled Mixiang Baijiu was studied.The results showed that the samples stored in low-temperature and dark environment had minimal changes,while direct sunlight had the greatest impact,resulting in the appearance of unpleasant odor.This study has provided reference for the storage environment of plain bottled Mixiang Baijiu,that is,the bottles should be sealed and stored in dry and dark places.
