摘 要:在保留米香白酒其他风味物质的前提下降低白酒乙醛含量,以达到醉度低、醒酒快的目的。本研究利用蒸馏规律,通过提高流酒温度减少一部分乙醛,慢速蒸馏将乙醛富集在酒头,经精馏将酒头中的乙醛进一步富集并去除。结果表明,成功将米酒中的乙醛富集在酒头并去除,根据截取酒头比例5%~20%的不同,去除率可达到43.2%~81.87%,分离出的乙醛纯净度高,体积仅占原液的0.16%~0.67%,损失乙酸乙酯含量仅占原液的1.24%~2.99%。提高流酒温度、慢速蒸馏结合酒头精馏的方法不仅能够有效降低米酒中的乙醛含量,还能够保留白酒原有风格,减少辛辣、苦涩等口感,使白酒香气更纯净、醉度更低、醒酒更快。By reducing the acetaldehyde content of Mixiang Baijiu on the premise of retaining other flavor substances,its sobering time after drinking can be shortened.In this study,by increasing the distillation temperature,prolonging the distillation time,and adding a rectification process,the acetaldehyde in Mixiang Baijiu was concentrated in the liquor head and removed successfully.The removal rate could reach 43.2%to 81.87%when the proportion of the liquor head was 5%to 20%.The separated acetaldehyde was of high purity,the volume of which only accounted for 0.16%to 0.67%of the crude liquor.The lost ethyl acetate content only accounted for 1.24%to 2.99%of the crude liquor.The method can not only effectively reduce the acetaldehyde content in Mixiang Baijiu,but also retain the original style of the product,reducing the spicy and bitter taste,lowering the intoxication level and shortening the sobering time.
