摘 要:以玉米须、藤茶和黑苦荞为原料,研制具有保健功效的复合袋泡茶。以感官得分和总黄酮含量为综合评价指标,通过单因素和响应面试验,确定玉米须复合袋泡茶的最佳配比及最佳冲泡参数。结果显示最佳配方为:玉米须∶藤茶∶黑苦荞最优质量比为1∶1∶2;袋泡茶有效成分最佳溶出条件为:冲泡时间7 min、冲泡温度87℃、冲水量130 mL,得到玉米须复合袋泡茶冲泡后茶水的感官评分为88.59分,总黄酮含量为6.986mg/g,综合得分为0.8716分。玉米须复合袋泡茶冲泡后茶水对α-葡萄糖苷酶和α-淀粉酶抑制活性IC50值分别为0.54、0.34 mg/mL,分别与0.6、0.4 mg/mL阿卡波糖的抑制活性相近;对ABTS^(+)自由基、OH自由基、DPPH自由基的IC50分别为4.99、6.82和5.63 mg/mL,实验结果表明玉米须复合袋泡茶具有较好的降血糖和抗氧化活性,是一种具有开发前景的功能性产品。A compound bagged tea with health benefits was developed using corn silk,vine tea,and Fagopyrum tataricum as raw materials.Sensory scores and total flavonoid content were used as comprehensive evaluation indicators.The optimal ratio and brewing parameters for the corn silk composite bagged tea were determined through single-factor and response surface experiments.The results indicated that the optimal formulation was a corn silk to vine tea to F.tataricum ratio of 1∶1∶2.The optimal extraction conditions for the effective components of the bagged tea were found to be a brewing time of 7 minutes,a brewing temperature of 87 ℃,and a water volume of 130 mL.Under these conditions,the sensory score of the brewed tea reached 88.59 points,and the total flavonoid content was 6.986 mg/g,resulting in a comprehensive score of 0.8716 points.After brewing,the IC_(50) values for the inhibition activities of the corn silk composite bagged tea against α-glucosidase and α-amylase were measured at 0.54 and 0.34 mg/mL,respectively,which were comparable to the inhibition activities of acarbose at 0.6 and 0.4 mg/mL.Additionally,the IC_(50) values against ABTS^(+) radicals,OH radicals,and DPPH radicals were 4.99,6.82,and 5.63 mg/mL,respectively.These findings indicated that the corn silk compound bagged tea exhibited good hypoglycemic and antioxidant activities,making it a promising functional product for development.
