食物多酚对未漂洗鱼糜中ATP降解的抑制作用研究

摘  要:从14种食物多酚提取物中筛选出7种,对酸性磷酸酶(acid phosphatase,ACP)、黄嘌呤氧化酶(xanthine oxidase,XOD)抑制效果较好的食物多酚提取物,将其分别添加到未漂洗鱼糜中,测定未漂洗鱼糜的K值,并分析多酚单体对ACP、XOD的体外抑制活性。葡萄籽、石榴皮、蓝莓、橄榄、莲子皮的多酚提取物对ACP、XOD活性均有较高的抑制率。其中,石榴皮多酚提取物显著抑制草鱼未漂洗鱼糜K值的增长,当其添加量为2.0%时,冻融循环5次后,空白组和加样组的K值分别是(20.36±0.89)%和(10.41±0.50)%;石榴皮多酚提取物中安石榴苷对ACP和XOD的抑制效果呈剂量依赖性。说明石榴皮多酚提取物可有效抑制未漂洗鱼糜ATP降解。石榴皮多酚提取物是潜在的未漂洗鱼糜天然保鲜剂。Seven food polyphenol extracts exhibiting good inhibitory effects on acid phosphatase(ACP) and xanthine oxidase(XOD) were screened from 14 types of food polyphenol extracts.These extracts were subsequently added to unrinsed surimi to determine the K-value of the unrinsed surimi,and analyze the in vitro inhibitory activity of the polyphenol monomers on ACP and XOD.The results showed that the polyphenol extracts from grape seed,pomegranate peel,blueberry,olive,and lotus seed showed high inhibition rates against both ACP and XOD.Among these,pomegranate peel polyphenols extract significantly inhibited the increase in the K-value of unrinsed grass carp surimi.When added at a concentration of 2.0%,the K-values of the unrinsed grass carp surimi after five freeze-thaw cycles were(20.36±0.89)% for the control group and(10.41±0.50)% for the treated group.The typical polyphenol monomer,punicalagin,found in pomegranate peel polyphenol extract exhibited a dose-dependent inhibition effect on ACP and XOD.These findings indicated that pomegranate peel polyphenol extract effectively inhibited ATP degradation in unrinsed surimi,with punicalagin being a potentially active polyphenol monomer.Therefore,pomegranate peel polyphenol extract was considered a promising natural preservative for unrinsed surimi.
