摘  要:为了准确测定根霉产淀粉酶、酯化酶的能力,以高产酯化酶和淀粉酶的2株根霉为材料,对3,5-二硝基水杨酸法测定根霉淀粉酶、对硝基苯酚比色法测根霉酯化酶的方法进行了优化,建立了3,5-二硝基水杨酸(DNS)法测定根霉淀粉酶活力的方法和硝基苯酚法测酯化酶活力方法。该方法可为根霉淀粉酶、酯化酶活力测定提供一定的参考依据,也可为科学了解根霉代谢产物和食用菌工业发酵菌种的选育提供参考依据和分析方法。In order to accurately determine the ability of Rhizopus to produce amylase and esterase,two high-producing strains of Rhizopus were used as 3,5-dinitrosalicylic acid method for the determination of Rhizopus amylase and P-Nitrophenol colorimetric method for the determination of Rhizopus esterase were 3,5-dinitrosalicylic acid(DNS)method and nitrophenol method were used to determine the activity of Rhizopus amylase.This method could provide a certain reference basis for determining the activity of amylase and esterification enzyme of Rhizopus,and could also provide a reference basis and analysis method for scientifically understanding the metabolites of Rhizopus and the selection and breeding of industrial fermentation strains of edible Fungi.
