摘  要:食品工艺学类课程是食品科学与工程专业人才培养体系中的核心课程,是一门实践性很强的跨学科课程,学习者需要将不同学科原理运用于食品加工的过程,解决食品加工中的问题,提高这类课程的教学质量是该专业教学改革的焦点。新媒体是基于互联网、移动通讯技术和数字技术等新型媒体平台进行信息传播和互动的新兴信息传输形式,深刻地影响了现代人的社会生活,也影响了高校的课堂教学活动。新媒体具有传播范围广、传播效率高、表现形式多样化的特点,并为学习者提供了更强的学习参与感,越来越多地应用于教学活动改革过程。基于新媒体传播的特点和食品工艺学类课程的目标要求,探讨了新媒体教学工具应用于高校食品工艺学类课程教学的途径,以期为提升此类课程的教学效果提供一定的参考。Food Technology course is the core course in the talent training system of food science and engineering major,and it is a highly practical interdisciplinary course.Learners need to apply different discipline principles to the process of food processing,solve problems in food processing,and improve the teaching quality of such courses are the focus of the teaching reform of this major.New media is a new form of information transmission based on the Internet,mobile communication technology,digital technology and other new media platforms for information transmission and interaction,which has profoundly affected the social life of modern people and also affected the classroom teaching activities of colleges and universities.New media has the characteristics of wide range of communication,high communication efficiency,and diversified forms of expression,and provides learners with a stronger sense of learning participation,and is increasingly applied in the reform process of teaching activities.Based on the characteristics of new media communication and the target requirements of Food Technology courses,this paper discussed the ways of applying new media teaching tools to the teaching of Food Technology courses in colleges and universities,in order to provide certain references for improving the teaching effect of such courses.
