摘 要:以不良风味中的苦味和酸味为主要研究对象,选用以α-环糊精、γ-环糊精、复配环糊精、食用盐、复配甜味剂、天然代糖等为主要影响因素的不良风味掩味剂,以经典人群口尝法为评价标准,研究掩味剂对苦味和酸味的掩味效果。结果表明:抑苦类掩味剂以复配环糊精为主要原料抑苦效果最佳,且受欢迎程度最高,最佳配方为复配环糊精(α-环糊精与γ-环糊精比例为1∶2.2),β-环糊精占比2.0%,低聚糖占比2.0%,剩余质量用麦芽糊精填充;以复配甜味剂为主的掩酸型掩味剂对酸味中药汤剂掩酸效果最佳,且受喜爱程度最高,最佳配方为α-环糊精占比5%,γ-环糊精占比5.0%,复配甜味剂占比0.5%,剩余质量用麦芽糊精填充。该试验为不良苦味和酸味中药提供掩味剂参考。In this study,the bitter and sour taste of bad flavor was developed as the main research object.The masking agent of bad flavor was selected withα-cyclodextrin,γ-cyclodextrin,compound cyclodextrin,edible salt,compound sweetener and natural sugar substitute as the main influencing factors.The masking effect of the masking agent on bitter and sour taste was studied using the classical population taste method as the evaluation standard.The results showed that compound cyclodextrin had the best anti-bitter effect and the highest popularity.The optimal formula was compound cyclodextrin(α-cyclodextrin:γ-cyclodextrin ratio of 1∶2.2),β-cyclodextrin ratio of 2.0%,and oligosaccharide ratio of 2.0%,and the remaining weight was filled with maltodextrin.The compound sweetener had the best effect on the acid masking of sour Chinese medicine decoction,and was the most popular.The optimal formula wasα-cyclodextrin accounting for 5%,γ-cyclodextrin accounting for 5.0%,and compound sweetener accounting for 0.5%,and the remaining weight was filled with maltodextrin.This study aimed to provide reference for masking agent of Chinese medicine with bad bitter and sour taste.
