摘 要:为全面评价湘莲从种植到成品全过程的质量安全水平,此研究实地调研收集并分析了湘莲主产地湘潭县在湘莲种植、生产、加工、仓储、成品等重要方面的情况及数据。结果表明:湘莲种植阶段作业较规范,生产加工流程相对较简单可控,有仓储温湿度和虫鼠害管控,灌溉水中的重金属铅、汞、镉、砷、铬检测含量均远低于水作农田灌溉水相应标准限值,随机抽取白莲和红莲等共10批次湘莲产品检测重金属、农药残留、污染物、真菌毒素等在内的共15项指标,所有项目检测合格率为99.3%;但种植土壤重金属镉污染风险较大,偶有因生产作业管理不规范使不良品流出。针对该结果,文章提出了对应质量风险防控建议,以期为从源头管控湘莲质量与安全状况提供参考。In order to comprehensively study the quality and safety level of Xianglian,the researchers collected actual information and data on the cultivation,processing,storage,product,and other important aspects of Xianglian in Xiangtan County,Xiangtan City,Hunan Province,the main production area of Xianglian.The research and analysis results indicated that the operation during the planting stage of Xianglian was relatively standardized,and the production and processing process were relatively simple and controllable.There were controls on storage temperature and humidity,as well as pest and rodent infestations.The detection levels of heavy metals such as lead,mercury,cadmium,arsenic,and chromium in irrigation water were much lower than the corresponding standard limits for irrigation water in water crops.A total of 10 batches of Xianglian products,including white lotus and red lotus,were randomly selected for testing their heavy metals,pesticide residues,pollutants,fungal toxins,and other 15 indicators.The pass rate of all items was 99.3%.However,the risk of heavy metal cadmium pollution in the planting soil is relatively high,and occasionally defective products are released due to improper production operation management.In response to this result,the article proposes corresponding quality risk prevention and control suggestions,in order to provide reference for controlling the quality and safety status of Xianglian from the source.
