摘  要:为筛选适宜核桃仁贮藏保鲜的脱氧剂,以云南泡核桃仁为研究对象,采用不同脱氧剂(Fe型、Cu型、缓释Fe型、缓释Cu型、Fe型+缓释Fe型、Cu型+缓释Cu型)进行包装处理,在加速氧化条件下(40℃)贮藏24 d,每4 d取样测定核桃仁的油脂氧化酸败、褐变度及水分含量等指标的变化。结果表明:与未添加脱氧剂包装的核桃仁相比,不同脱氧剂均能在一定程度上延长核桃仁的贮藏期,其中复合脱氧剂(Fe型+缓释Fe型)能显著抑制核桃仁在加速氧化贮藏中过氧化值、共轭二烯值、共轭三烯值、酸价、羰基价和丙二醛含量的上升,贮藏至24 d时,与对照组相比分别降低了55.23%、29.31%、51.31%、33.04%、43.53%和57.20%;此外,复合脱氧剂还能明显降低核桃仁的褐变度与b^(*)值,延缓L^(*)值下降,维持其水分含量。综上,在泡核桃仁贮藏期间,复合脱氧剂(Fe型+缓释Fe型)能较大程度保持核桃仁的品质,延缓核桃氧化酸败,为核桃仁的贮藏保鲜提供一种有效的方法。This study aimed to select the suitable deoxidizers for walnut kernels storage and preservation.The walnut kernels from Juglans sigillata were taken as the research object,and were packaged with different deoxidizers(Fetype,Cu-type,slow-release Fe-type,slow-release Cu-type,Fe-type+slow-release Fe-type and Cu-type+slowrelease Cu-type)under accelerated oxidation condition(40℃)for 24 days.The changes in oil oxidative rancidity,browning degrees,and moisture contents of walnut kernels were measured every 4 days.The results showed that differ-ent deoxidizers could prolong the storage periods of walnut kernels to some extent.Among them,the composite deoxi-dizer(Fe-type+slow-release Fe-type)could significantly inhibit the increase of peroxide values,conjugated diene values,conjugated triene values,acid values,carbonyl values and malondialdehyde contents during accelerated oxida-tive storage,which were reduced by 55.23%,29.31%,51.31%,33.04%,43.53%,and 57.20%,respectively,compared with those of control group.In addition,the composite deoxidizer could also effectively reduce the browning degrees and b^(*)values of walnut kernels,delay the L^(*)values decline,and maintain the moisture contents.In summary,the com-posite deoxidizer(Fe-type+slow-release Fe-type)could maintain the qualities to a large extent and delay the oxida-tive rancidity of walnut kernels from Juglans sigillata during the storage period,which would provide an effective strategy for the storage and preservation of walnut kernels.
