摘  要:硒是一种人体必需的微量元素,但我国居民日常饮食中平均硒摄入量与中国营养学会推荐的最低限度50μg相距甚远。植物中的硒大部分是生物活性高、毒性低的有机硒。研究植物有机硒的提取工艺,对于开发富硒食品和保健品具有重要意义。本文综述了植物有机硒提取工艺的研究进展,介绍了植物有机硒的重要性及来源,阐述了目前常用的提取方法,包括溶剂提取法、超声辅助提取法、微波辅助提取法等,并对各种方法的优缺点进行了分析。同时,探讨了提取工艺的影响因素以及未来的发展趋势,为植物有机硒高效提取工艺的建立提供参考。Selenium is an essential trace element for the human body,but the average selenium intake in the daily diet of Chinese residents is far from the minimum recommended by the Chinese Nutrition Society of 50μg.Most of the selenium in plants is organic selenium with high biological activity and low toxicity.Studying the extraction process of organic selenium from plants is of great significance for the development of selenium rich foods and health products.This article reviews the research progress on the extraction process of organic selenium from plants.This article introduces the importance and sources of plant organic selenium,elaborates on the commonly used extraction methods,including solvent extraction,ultrasound assisted extraction,microwave-assisted extraction,etc.,and analyzes the advantages and disadvantages of various methods.At the same time,the influencing factors of extraction technology and future development trends were explored,providing reference for the establishment of efficient extraction technology for plant organic selenium.
