摘 要:选择产地为贵州安顺普定县、湖南永州祁阳县、云南文山马关县的3种生姜作为研究对象,测定3种生姜的燃烧热、燃烧稳定性、脂肪、粗纤维、灰分、微量元素、氨基酸。结果表明,3种生姜燃烧热为15711.74~18516.34 J/g,排序为贵州安顺普定县>云南文山马关县>湖南永州祁阳县;燃烧稳定性为0.28~0.79,排序为云南文山马关县>湖南永州祁阳县>贵州安顺普定县;粗纤维含量为8.16%~8.39%,排序为湖南永州祁阳县>云南文山马关县>贵州安顺普定县;脂肪含量为1.34%~2.31%,排序为云南文山马关县>湖南永州祁阳县>贵州安顺普定县;灰分含量为6.18%~7.99%,排序为湖南永州祁阳县>贵州安顺普定县>云南文山马关县。燃烧热、燃烧性(生姜的燃烧稳定性)、脂肪含量、灰分、粗纤维、微量元素、氨基酸含量等指标的排序为湖南永州祁阳县>贵州安顺普定县>云南文山马关县。本研究建立了3种生姜的多指标分析及评价体系,为生姜的质量评价和其综合利用提供一定的理论基础和科学指导。Three kinds of ginger with the origins of Puting County,Anshun,Guizhou,Qiyang County,Yongzhou,Hunan,and Maguan County,Wenshan,Yunnan were selected as the research objects,and the heat of combustion,stability of combustion,fat,crude fiber,ash,trace elements,and amino acids were determined for the three kinds of ginger.The results showed that the heat of combustion of the three kinds of ginger ranged from 15711.74 to 18516.34 J/g,in the order of Anshun Puding County,Guizhou>Maguan County,Wenshan,Yunnan>Qiyang County,Yongzhou,Hunan,and the stability of combustion ranged from 0.28 to 0.79,in the order of Maguan County,Wenshan,Yunnan>Qiyang County,Yongzhou,Hunan>Puding County,Anshun,Guizhou,and the content of crude fiber(%)ranged from 8.16 to 8.39%,in the order of Yongzhou,Hunan.Between 8.16%~8.39%crude fiber content(%),in the order of:Hunan Yongzhou Qiyang County>Yunnan Wenshan Maguan County>Guizhou Anshun Puding County;fat content(%)between 1.34%~2.31%,in the order of:Yunnan Wenshan Maguan County>Hunan Yongzhou Qiyang County>Guizhou Anshun Puding County;ash content(%)between 6.18~7.99,in the order of:Hunan Yongzhou Qiyang County>Guizhou Anshun Puding County>Yunnan Wenshan Maguan County.The order of multiple indicators of heat of combustion,combustibility(combustion stability of ginger),fat content,ash,crude fiber,trace elements,and amino acid content was:Qiyang County,Yongzhou,Hunan>Puting County,Anshun,Guizhou>Maguan County,Wenshan,Yunnan.The present study establishes a multi-indicator analysis and evaluation system for three kinds of ginger,which provides a certain theoretical basis and scientific guidance for the quality evaluation of ginger and its comprehensive utilization.
