摘 要:在食品重金属检测中,电感耦合等离子体质谱法(Inductively Coupled Plasma-Mass Spectrometry,ICP-MS)可以提供快速准确的检测结果,帮助相关人员及时了解食品中的有害物质含量,从而迅速采取相应措施。基于此,本文介绍了ICP-MS的工作原理,包括电感耦合等离子体的产生和质谱分析过程;探讨了食品样品的前处理方法,如消解技术等;重点分析了ICP-MS在检测食品中常见重金属(如铅、镉、汞、砷等)方面的优势,包括高灵敏度、多元素同时分析能力等,同时也指出了该方法在实际应用中面临的挑战,如光谱干扰和高成本等,为相关人员提供参考。In the detection of heavy metals in food,inductively coupled plasma mass spectrometry(ICP-MS)can provide rapid and accurate detection results,and help relevant personnel timely understand the content of harmful substances in food,so as to take corresponding measures quickly.Based on this,this article elaborates on the application of ICP-MS in the detection of heavy metals in food.Firstly,the working principle of ICP-MS was introduced,including the generation of inductively coupled plasma and the mass spectrometry analysis process.Then,the pre-treatment methods for food samples,such as digestion techniques,were discussed.The advantages of ICP-MS in detecting common heavy metals(such as lead,cadmium,mercury,arsenic,etc.)in food were analyzed,including high sensitivity and the ability to simultaneously analyze multiple elements.At the same time,the challenges faced by this method in practical applications,such as spectral interference and high cost,were also pointed out.
