摘  要:6~24月龄婴幼儿食用母乳量逐渐减少,能量和营养需求最终将来自辅食,米粉是婴幼儿食用的主要辅食。通过计算营养密度,提供营养搭配的合理框架,来满足婴幼儿在生长过程中营养及能量需求。实验结果表明,从米粉中各营养成分的营养密度估算,6~24月龄婴幼儿每日除食用母乳、米粉外需额外补充蛋白质、铁、维生素D;12~24月龄婴幼儿需额外添加钙;12~24月龄女婴幼儿需额外锌;从米糊满足婴幼儿吞咽黏度的角度,婴幼儿除每日食用母乳外,6~8月龄婴幼儿食用米粉黏度过高,不宜食用米粉,需额外补充蛋白质、钙、铁、锌、维生素D;9~11月婴幼儿需额外补充蛋白质、铁、锌、维生素A、维生素D;12~24月婴幼儿需额外补充蛋白质、钙、铁、锌、维生素D、维生素C。营养密度作为营养强化的一种方法,可以达到适当且安全的添加的目的。The amount of breast milk consumed by infants aged 6-24 months is gradually decreasing,and the energy and nutritional requirements will eventually come from complementary foods.Rice flour is the main complementary food for infants.By calculating nutrient density,a reasonable framework of nutrient mix is provided to meet the nutritional and energy needs of infants and young children in the growth process.The experimental results showed that,from the estimation of the nutrient density of each nutrient in rice flour,infants aged 6-24 months need additional daily supplementation of protein,iron,vitamin D,etc.in addition to breast milk and rice flour.Infants aged 12-24 months need additional calcium.Extra zinc for female infants aged 12-24 months.From the perspective that the rice paste meets the swallowing viscosity of infants and young children,in addition to the daily use of breast milk,the viscosity of rice flour for infants and young children aged 6-8 months is too high,and rice flour should not be eaten,and additional protein,calcium,iron,zinc and vitamin D should be added.Infants aged 9-11 months need additional protein,iron,zinc,vitamin A and vitamin D.Infants aged 12-24 months need additional protein,calcium,iron,zinc,vitamin D and vitamin C.Nutrient density as a method of nutritional fortification can be achieved with appropriate and safe additions.
