摘 要:为了解杂交后湘东鸡选育效果及与母本的营养价值差异,本试验对196日龄笼养湘东鸡和母本湘黄鸡母鸡的营养成分进行比较测定。结果表明,各处理组鸡胸肌中常规营养成分、氨基酸含量及肌苷酸含量均无显著差异(P>0.05)。湘东鸡母鸡腿肌中水分含量极显著低于湘东鸡公鸡(P<0.01),但粗脂肪和粗灰分含量极显著高于湘东鸡公鸡(P<0.01),粗灰分含量极显著高于湘黄鸡母鸡(P<0.01);湘东鸡母鸡腿肌中除苯丙氨酸(Phe)显著高于湘东鸡公鸡(P<0.05)外,其他16种氨基酸均极显著高于湘东鸡公鸡(P<0.01),但与湘黄鸡母鸡差异不显著(P>0.05)。湘东鸡母鸡胸肌中饱和脂肪酸含量极显著高于湘黄鸡母鸡(P<0.01),不饱和脂肪酸含量极显著低于湘黄鸡母鸡(P<0.01);湘东鸡母鸡胸肌中单不饱和脂肪酸极显著高于湘东鸡公鸡(P<0.01)、显著高于湘黄鸡母鸡(P<0.05),但多不饱和脂肪酸极显著低于二者(P<0.01)。综上,湘东鸡营养价值与湘黄鸡相近,且胸肌营养价值、肉质风味、肌苷酸含量均优于腿肌;湘东鸡公鸡胸肌的营养价值最高;湘东鸡母鸡腿肌中粗脂肪含量高;湘黄鸡母鸡在多不饱和脂肪酸与饱和脂肪酸指标具有一定优势。本试验为进一步利用湖南优质地方品种桃源鸡和湘黄鸡的杂交优势,培育出更能满足市场需求的湘东鸡提供了基础数据。In order to understand the breeding effect and nutritional value difference between Xiangdong chickens and their mother after hybridization,the nutritional composition of 196-day-old caged Xiangdong chickens and their mother Xianghuang chickens were compared and determined.The results showed that there were no significant differences in the contents of conventional nutrients,amino acids and inosine acid in breast muscle among all treatment groups(P>0.05).The moisture content in leg muscle of Xiangdong chickens was significantly lower than that of Xiangdong chickens(P<0.01),but the crude fat and ash contents were significantly higher than those of Xiangdong chickens(P<0.01),and the ash content was significantly higher than that of Xianghuang chickens(P<0.01).Except phenylalanine(Phe)in the leg muscle of Xiangdong chickens was significantly higher than that of Xiangdong chickens(P<0.05),other 16 amino acids were significantly higher than that of Xiangdong chickens(P<0.01),but there was no significant difference between them and Xianghuang chickens(P>0.05).The content of saturated fatty acid in breast muscle of Xiangdong chickens was significantly higher than that of Xianghuang chickens(P<0.01),and the content of unsaturated fatty acid was significantly lower than that of Xianghuang chickens(P<0.01).The monounsaturated fatty acids in breast muscle of Xiangdong chickens were significantly higher than those of Xiangdong chickens(P<0.01)and Xianghuang chickens(P<0.05),but the polyunsaturated fatty acids were significantly lower than those of both(P<0.01).In conclusion,the nutritional value of Xiangdong chicken was similar to that of Xianghuang chicken,and the nutritional value,meat flavor and inosine content of pectoral muscle were better than those of leg muscle.The breast muscle of Xiangdong chicken had the highest nutritional value;The crude fat content in the thigh muscle of Xiangdong chickens was high.The indexes of polyunsaturated fatty acids and saturated fatty acids of Xianghuang chickens are the most advantage
