摘  要:我国目前乙醇的生产仍以玉米原料为主,而浓醪发酵技术在酒精生产企业获得普遍认可。浓醪发酵不仅可以提高设备利用率,同时还可以降低能源动力消耗,减少污染物排放,最大限度降低生产成本,是酒精发酵行业的发展目标和方向。从高浓底物、产物、温度、pH、氮源、钙镁离子、发酵促进剂、酵母菌种等关键要素,综述分析了浓醪发酵的影响因素及应对措施,可供为从事玉米酒精发酵行业人员提供借鉴与参考。Currently,ethanol production in China is still mainly based on corn as raw material,and the high gravity fermentation technology has been generally recognized in ethanol production enterprises.High gravity fermentation can not only improve equipment utilization,but also reduce energy and power consumption,decrease pollutant emissions,and minimize production costs.It is the developmental goal and direction of the ethanol fermentation industry.This article reviews the influence factors and countermeasures in high gravity fermentation from the key elements such as high concentrated substrates,products,temperature,pH,nitrogen sources,ions of calcium and magnesium,fermentation elicitor and yeast strains,which provides reference and guidance for personnel in corn based ethanol fermentation industry.
