摘  要:白酒的贮存对酒质的提升至关重要,本文梳理了近年来白酒贮存研究所取得的丰硕成果。深入探讨了不同贮存容器,如陶坛、不锈钢罐、血料容器、木质酒箱、酒池贮存以及瓶贮等,各自独特的特性以及对酒体所产生的影响。同时,还对贮存酒液的环境以及贮存时间进行了分析,分别阐述了露天贮存、室内贮存、洞藏等不同环境下,以及贮存时间的长短对白酒品质产生的变化。最后,总结了白酒贮存的各种影响因素,为白酒爱好者在后期贮存白酒、提升白酒品质时提供了宝贵的参考价值。The storage of Baijiu is very important for the improvement of Baijiu quality.This paper reviews the fruitful achievements of Baijiu storage research in recent years.The unique characteristics of different storage containers,such as pottery jar,stainless steel tank,blood container,wooden wine box,wine tank storage and bottle storage,and their influence on the Baijiu quality were discussed in depth.At the same time,the environment and storage time of Baijiu storage were analyzed,and the changes of Baijiu quality under different environments such as open storage,indoor storage and cave storage,as well as the length of storage time were expounded.Finally,the various influencing factors of Baijiu storage were summarized,which provided valuable reference value for Baijiu lovers to store Baijiu and improve Baijiu quality in the later stage.
