摘 要:为了解决低度白酒在低温下出现失光、浑浊和沉淀等问题,提高凤香型低度酒的质量,陕西柳林酒业引进了冷冻过滤设备,研究不同低温过滤条件对低度白酒的影响,为实际生产提供数据支撑。通过冷冻过滤技术和活性炭吸附对比,结果表明,在过滤温度为-10℃,能有效的降低低度白酒中总酸、总酯和微量成分的损失,且解决了低度酒在低温下失光、浑浊和沉淀等问题,使低度白酒的产品质量得到了显著提升。In order to solve the problems of light loss,turbidity and sedimentation of low alcohol Baijiu at low temperature,and improve the quality of low alcohol Fengxiang liquor,Shaanxi Liulin Liquor Industry introduced freezing filtration equipment to study the impact of different low-temperature filtration conditions on low alcohol Baijiu,providing data support for actual production.Through the comparison of freeze filtration technology and activated carbon adsorption,the results showed that at the filtration temperature of-10℃,the loss of total acid,total ester and trace components in low alcohol Baijiu could be effectively reduced,and the problems of light loss,turbidity and precipitation of low alcohol Baijiu at low temperature were solved,so that the product quality of low alcohol Baijiu was significantly improved.
