人参柠檬复合饮料加工配方研究

摘  要:本文以人参、柠檬为主要原料,以木糖醇、柠檬酸、胶原多肽和羧甲基纤维素钠等为辅料制备人参柠檬复合饮料。以感官评分为指标,采用单因素试验和响应面试验研究和优化人参柠檬复合饮料加工配方。结果表明,人参柠檬复合饮料的加工配方为取2 mL人参提取液,加入4%柠檬汁,加入适量水搅拌均匀,缓慢加入0.16%羧甲基纤维素钠,混合均匀,加入0.08%柠檬酸、4.2%木糖醇、5 g胶原三肽,加水至200 mL。然后,利用高速剪切分散机在4000 r·min^(-1)条件下分散5 min,利用胶体磨在20000 r·min^(-1)条件下分散乳化3次,每次30 s。置于杀菌釜中在80℃温度下杀菌30 min,冷却,得到人参柠檬复合饮料。该条件下,饮料的感官评分为93.2分。In the study,ginseng and lemon were used as the main raw materials,and xylitol,citric acid,collagen peptide and sodium carboxymethylcellulose were used as auxiliary materials to prepare ginseng and lemon composite beverage formula.Sensory score was used as the index to study and optimize the processing technology of ginseng and lemon composite drink by using one-way test and response surface test.The results showed that the process formula of ginseng lemon complex drink was to take 2 mL ginseng extract,add 4%lemon juice,add appropriate amount of water to stir well,slowly add 0.16%sodium carboxymethyl cellulose,mix well,add 0.08%citric acid,4.2%xylitol,5 g collagen tripeptide,and add water to 200 mL.Then,the high-speed shear dispersing machine was used to disperse for 5 min under the condition of 4000 r·min^(-1),and the colloidal mill was used to disperse and emulsify for 3 times under the condition of 20000 r·min^(-1),each time for 30 s.After sterilization at 80℃for 30 min and cooling,ginseng lemon complex beverage was obtained.Under these conditions,the beverage had a sensory score of 93.2.
