摘　　要：目的了解食盐加碘浓度调整后福建省居民的膳食碘摄入情况。方法采取多阶段分层随机抽样方法,在福建省内抽取120户居民,采用称重法、3日记账法及3日24小时回顾法调查居民户的食物消费情况。结果福建省不同地理区域居民膳食结构均有待改善。在假设福建省不同地理区域的居民使用的食用盐均为碘盐的情况下,福建省沿海城市、沿海农村、内陆城市、内陆农村居民平均每标准人日的膳食碘摄入量分别为:223.87、229.52、274.23、282.27μg,均达到中国营养学会在《中国居民膳食营养素参考摄入量(2023版)》推荐的RNI(120μg/d)。结论食盐加碘浓度调整后,福建省居民在正常食用加碘食盐的情况下,可达到适宜的膳食碘摄入水平。Objective To investigate the dietary iodine intake of residents in Fujian Province after the adjustment of salt iodization concentration.Methods A multi-stage stratified random sampling method was used to select 120 households in Fujian Province.The food consumption of the households was investigated by weighing method,3-day diary method and 3-day 24-hour recall method.Results The dietary structure of residents in different geographical regions of Fujian Province needs to be improved.Assuming that the edible salt used by residents in different geographical regions of Fujian Province is iodized salt,the average dietary iodine intake per standard person day of residents in coastal cities,coastal rural areas,inland cities and inland rural areas of Fujian Province were 223.87,229.52,274.23 and 282.27μg,respectively,which all reached the RNI(120μg/d)recommended by the Chinese Nutrition Society in the Dietary Nutrient Reference Intake of Chinese Residents(2023 Edition).Conclusion After the adjustment of salt iodization concentration,residents in Fujian Province can achieve an appropriate level of dietary iodine intake under the condition of normal consumption of iodized salt.
