摘  要:分析γ-氨基丁酸(GABA)在功能性食品中的应用现状,并对其生产工艺、检测方法和生理功能进行综述,为相关功能性食品开发提供参考。以γ-氨基丁酸、GABA、功能性食品等为检索词在中国知网、万方数据库、维普数据库、PubMed和Webof Science等数据库中查找相关文献进行归纳整理。结果表明,γ-氨基丁酸已成为一种流行的膳食补充剂,在功能性食品开发领域具有广阔的应用前景,但由于功能性食品法律法规和监管措施的不完善及γ-氨基丁酸检测方法和质量控制的缺失,使其在市场宣传推广方面受到阻碍。应加快建立γ-氨基丁酸检测方法标准和产品质量控制手段,加大作用机理的研究和不同品类产品的研发,推动γ-氨基丁酸产业发展。Analyze the current status of the application of y-aminobutyric acid(GABA)in functional foods,and review its production process,detection methods and physiological functions,so as to provide reference for the development of related functional foods.The search terms of y-aminobutyric acid,GABA and functional food were used to find the relevant literature in the databases of China Knowledge Network,Wanfang Database,Wipu Database,PubMed and Web of Science for summarization.Result showed that y-aminobutyric acid had become a popular dietary supplement and had a broad application prospect in the field of functional food development,but its promotion and promotion in the market were hindered by the imperfections in the laws,regulations and regulatory measures for functional foods and the lack of testing methods and quality control of y-aminobutyric acid.The establishment of y-aminobutyric acid testing method standards and product quality control means should be accelerated,the research on the mechanism of action and the research and development of different types of products should be increased,and the development of y-aminobutyric acid industry should be promoted.
