摘  要:农药残留随着复杂的油脂加工过程发生降解、富集、迁移或者转化,是影响油脂品质安全的重要因素之一,对人体健康造成潜在风险。但目前油脂加工过程影响农药残留关键因素系统性研究不足,导致其安全控制技术匮乏,影响油脂品质及产业发展。构建油脂高效安全控制技术,是我国油脂产业高质量发展的迫切需求。因此,本文对油脂加工过程中农药残留种类、含量水平及加工行为等进行综述,分析农药残留影响的关键因素,从安全控制角度提出油脂加工过程农药残留关键控制点,也为加工制品中农药最大残留限量标准制订提供理论数据支撑。Pesticide residue is subjected to degradation,enrichment,migration or transformation during the complicated oil processing,exposing human health to potential risks,being an important factor that affects the safety of oil quality.However,regarding the key factors affecting pesticide residue in the oil processing process,systematic research is inadequate,leading to insufficient safety control technology and affecting oil quality and industry development.To enable high-quality development of our oil industry,it is an urgent requirement to develop efficient oil safety control technology.Hence,in this paper,a review of categories of pesticide residue in oil processing process,its content level and processing behavior was made,key factors affecting pesticide residue,proposed key control points for pesticide residue during the oil processing were analyzed,and theoretical data support were provided for formulating the limit standard for the maximum pesticide residue in processed products.
