摘 要:食物是人类生存与发展的物质基础,乡村美食作为一种具有乡土气息和自然魅力的特殊饮食文旅资源,为怀旧情感的抒发提供了有效载体。遵循量表开发的规范程序,以南京大塘金村、扬州沿湖村、镇江丁庄村等三个典型乡村美食旅游地为对象,采用质性研究与定量研究相结合的分析方法,探究乡村美食怀旧情感的内涵与维度,开发并验证了乡村美食怀旧情感测量量表。旨在拓展怀旧理论在乡村美食研究领域的应用,为旅游者的美食怀旧情感研究提供可借鉴的测量与分析方法,希冀为开发和营造基于美食怀旧的乡村旅游体验产品和氛围提供理论和实践参考。Food is the material basis for human survival and development.As the special catering culture and tourism resources with local flavor and natural charm,rural foods provide effective carriers for expressing nostalgic emotions.Following the standard procedure of scale development,we take Datangjin Village in Nanjing,Yanhu Village in Yangzhou,and Dingzhuang Village in Zhenjiang as objects,and adopt a combination of qualitative and quantitative research methods to analyze the connotation and dimensions of nostalgia for rural food.And then we develop and verify the scale.This study expands the application of nostalgia theory in the field of rural food research,provides reference measurement and analysis methods for tourists’food nostalgia emotions research,and hopes to provide theoretical and practical references for the development and creation of rural tourism experience products and atmosphere based on rural food nostalgia.
