摘  要:目的:基于电子鼻和顶空-气相色谱-质谱(HS-GC-MS)技术,探究当归及其3种混伪品的气味差异和物质基础。方法:以当归、东当归、欧当归及独活为研究对象,采用电子鼻和HS-GC-MS技术分别从气味和具体挥发性成分2个方面进行分析,通过化学计量学方法筛选品种间的差异性成分,通过相关性分析探寻传感器响应值与差异性成分间的相关性规律。结果:当归及其混伪品间气味、挥发性成分种类及含量差异明显。电子鼻的检测结果经主成分分析后能较好地区分当归及其混伪品;采用HS-GC-MS技术共鉴别出烯烃类、酯类、芳香类、醛类等58个成分,且不同品种样品间化合物相对质量分数差异明显。以变量重要性投影值>1为标准筛选出的23个差异性挥发性成分与电子鼻传感器进行Person相关性分析,结果表明差异性气味产生的物质基础主要为p-伞花烃、庚醛、糠醛、莰烯、水芹烯等。结论:电子鼻技术结合化学计量学方法可区分当归及其混伪品,结合HS-GC-MS技术揭示当归及其混伪品的气味特征及差异,可为当归的真伪鉴别提供新的思路和方法。Objective:To investigate the odor difference of Angelicae Sinensis Radix and its three adulterants and to elucidate the material basis of odor formation using electronic nose and headspace gas chromatography-mass spectrometry(HS-GC-MS)technology.Method:The overall odor profiles were analyzed by electronic nose,while specific volatile components were characterized using HS-GC-MS with Angelicae Sinensis Radix,Angelica Acutiloba Kitagawa,Levisticum Officinale Koch,and Angelicae Pubescentis Radix as the research objects.Chemometric methods were used to select species-specific components,and correlation analysis was employed to explore the correlation between sensor response values and species-specific components.Result:Significant differences in odor profiles,volatile composition,and compound abundance were observed between Angelicae Sinensis Radix and its adulterants.The principal component analysis(PCA)of the electronic nose data effectively differentiated the samples of Angelicae Sinensis Radix and its adulterants.HS-GC-MS identified 58 volatile compounds,including olefins,esters,aromatic compounds,and aldehydes,with distinct relative abundance patterns across species.The Person correlation analysis between 23 different volatile components screened by the variable importance projection(VIP)>1 and the electronic nose sensor showed that C2(m-Cymene),C7(Heptanal),C8(Furfural),C17(Camphene),and C18(alpha-Fellandrene)constituted the primary material basis for the differing odors.Conclusion:Electronic nose technology combined with chemometric methods can distinguish Angelicae Sinensis Radix and its adulterants.The combination with HS-GC-MS technology reveals odor characteristics and differences,which can provide new ideas and methods for the authenticity identification of Angelicae Sinensis Radix.
