摘 要:随着全球化食品贸易的迅速发展和消费者对食品安全要求的提高,食品安全风险管理变得尤为重要。本文旨在构建一个科学、实用的食品安全风险评估模型,以提高食品安全风险的识别、评估与控制能力。在分析了国内外食品安全风险评估的现状与挑战,明确了研究的目的与意义的基础上采用文献综述、专家咨询等方法,探讨了食品安全风险评估的理论框架,并结合模糊数学理论,设计了一套基于模糊综合评价法的食品安全风险评估模型。通过实际案例验证了模型的有效性,并对模型进行了优化。结果表明,该模型能够有效地对食品安全风险进行量化评估,为食品安全管理提供决策支持。With the rapid development of global food trade and the improvement of consumers'requirements for food safety,food safety risk management has become particularly important.This paper aims to build a scientific and practical food safety risk assessment model to improve the ability of food safety risk identification,assessment and control.Firstly,this paper analyzes the present situation and challenges of food safety risk assessment at home and abroad,and makes clear the purpose and significance of the research.Then,this paper discusses the theoretical framework of food safety risk assessment by means of literature review and expert consultation,and designs a set of food safety risk assessment model based on fuzzy comprehensive evaluation method combined with fuzzy mathematics theory.In this paper,the effectiveness of the model is verified by practical cases,and the model is optimized.The results of this paper show that the model can effectively quantitatively evaluate food safety risks and provide decision support for food safety management.
