摘  要:为了解本地区市售肉类食品是否存在掺假情况,并验证膜芯片技术在多种肉类食品掺假检测中的应用效果,参照GB/T 35917—2018《常见动物源性成分快速测定膜芯片法》,采用膜芯片技术对多种肉类及其制品中的11种动物源性成分进行检测,与标签明示比对进行掺假分析。在检测的24份样品中,有2份样品与标签明示不符。其中1份牛肉制品未检出黄牛成分而检出鸭、羊成分,1份羊肉制品检出鸭成分,表明这2份样品存在以鸭肉掺假的情况。对肉糜中猪源性成分分析的质控样品进行检测后,所得到的检测结果和证书内容相一致。膜芯片技术检测结果准确可靠,在多种肉类食品的动物源性成分检测和掺假鉴别中都有较好的应用。In order to investigate whether there is adulteration in meat products sold in local market and verify the application effect of membrane chip technology in the detection of adulteration in various meat products,this paper referred to GB/T 35917-2018,Rapid detection for animal-derived materials—Membrane-based array method,detected 11 animal-derived components in various meats and their products with the membrane chip technology,and compared the labels for adulteration analysis.Among the 24 samples tested,2 samples did not match the label indication.Duck and sheep components instead of cattle components were detected in 1 beef product,and duck components were detected in 1 mutton product,indicating that these two samples were adulterated with duck meat.The test result of the quality control sample for the analysis of pig-derived component in minced meat was consistent with the certificate.The membrane chip technology has accurate and reliable detection results,and has good applications in the animalderived components detection and adulteration identification in various meat products.
