摘  要:鸡蛋作为一种营养全面、全球居民接受度较高的食物之一,在全球具有重要地位,同时其作为营养素的有效载体,可以通过调节蛋鸡日粮进而调控鸡蛋营养物质组成,因此,生物营养强化鸡蛋成为一种有巨大潜力的功能性食品.我国居民宏量营养素摄入充足,但是部分重点地区、重点人群,如婴幼儿、育龄妇女和高龄老年人摄入的重要微量营养素仍旧缺乏,而生物营养强化鸡蛋是解决这一问题的有效途径之一.因此,本文综述了ω-3多不饱和脂肪酸(ω-3 PUFA)、维生素类(维生素A和叶酸等)、微量元素类(硒等)以及类胡萝卜素(虾青素和叶黄素)等生物营养强化鸡蛋生产的研究进展,重点围绕营养素的生物活性功能及其生产方式,以期为生物营养强化鸡蛋生产提供科学依据.Corresponding author,E-mail:zhangjunmin@caas.cn Eggs are one of the most nutritionally complete and widely accepted foods globally,serving as effective carriers of essential nutrients.Through modification of laying hens’diets,the nutritional composition of chicken eggs can be optimized,transforming them into biofortified functional foods with significant potential.While the intake of macronutrients among Chinese residents is generally adequate,there are still deficiencies in essential micronutrients in specific regions and populations,particularly among infants,women of childbearing age,and the elderly.Biofortified eggs represent a promising strategy to address these nutritional gaps.This paper reviews the research progress on the production of biofortified eggs enriched withω-3 polyunsaturated fatty acids(ω-3 PUFAs),vitamins(such as vitamin A and folic acid),trace elements(such as selenium),and carotenoids(such as astaxanthin and lutein).The focus is on the bioactive functions of these nutrients and the methods used to enhance their fortification in eggs,aiming to provide a scientific support for the development and expansion of biofortified egg industry.
