摘  要:以‘镇安1号’、‘燕丰3113’和‘桂花香’3个不同板栗栽培品种为试验材料,测定其主要营养成分含量。结果表明:(1)3个不同品种板栗的干物质中维生素含量丰富,但均检测不到维生素A和胱氨酸;(2)3个板栗品种营养成分有差异,但不存在某个品种完全处于优势地位,而是各有特色;(3)板栗中含有的6种脂肪酸中,以油酸和亚油酸呈现出优势,其含量为棕榈油酸和硬脂酸含量的20~30倍以上;(4)‘镇安1号’板栗相对其它2个品种排名靠前且硒含量丰富。对不同板栗品种进行主要营养成分的比较,以期为镇安县板栗产业的发展提供科学依据。With three different chestnut cultivars,namely‘Zhen′an No.1’,‘Yanfeng 3113’,and‘Guihuaxiang’,as experimental materials,the content of their main nutrients was determined.The results showed that(1)The dry matter of all three chestnut cultivars is rich in vitamins,but neither vitamin A nor cystine was detected;(2)there are differences in the nutrient composition among the three chestnut cultivars,with no single cultivar holding a completely dominant position;rather,each has its unique characteristics;(3)among the six fatty acids found in chestnuts,oleic acid and linoleic acid are predominant,with their contents being more than 20-30 times that of palmitoleic acid and stearic acid;(4)‘Zhen′an No.1’chestnuts rank higher compared to the other two cultivars and are rich in selenium.A comparison of the main nutrients in different chestnut cultivars was conducted to provide a scientific basis for the development of the chestnut industry in Zhen'an County.
