摘 要:近年来,随着生活水平的提高,人们逐渐重视营养素的均衡摄入。坚果营养素齐全且富含功能性成分,备受消费者的青睐,因此其质量安全问题也受到关注。本文对坚果中常规理化指标、污染物、真菌毒素、农药残留、微生物指标检测、食品添加剂等项目的各种检测方法及其优缺点进行探究,为坚果质量安全检测技术的选用提供了一定的基础。In recent years,with the improvement of living standards,people have gradually attached importance to the balanced intake of nutrients.Nut nutrition is complete and rich in functional ingredients,which is highly favored by consumers,so its quality and safety issues have also received attention.This article explores various detection methods and their advantages and disadvantages for routine physical and chemical indicators,pollutants,fungal toxins,pesticide residues,microbial indicators,food additives,and other items in nuts,providing a certain foundation for the selection of nut quality and safety detection technologies.
