摘 要:凉山州作为中国粮食行业协会认定的“中国苦荞之都”,是国内苦荞种植面积最大、苦荞产量最高、苦荞生产加工企业分布最多的地级市。本研究主要选取2021—2023年3年来,凉山州内17个县(市)主要苦荞种植区的261份苦荞样品,严格按照国家标准,检测苦荞样品中的铅、镉、砷、汞、铬5种重金属元素的含量进行检测,并依据《食品安全国家标准食品中污染物限量》(GB 2762—2022)中规定的限量标准进行评估。采用常用的重金属污染评估法对苦荞样品中重金属含量进行研究评估,并结合单一、复合危害系数法的风险评估模型,评估苦荞中重金属对人体的健康风险。经评估,5种重金属元素对人体产生的健康风险较低,可见凉山州苦荞的安全状况总体良好。As the“Capital of Tartary Buckwheat in China”recognized by the China Grain Industry Association,Liangshan prefecture is the prefecture level city with the largest planting area,highest production,and the most distribution of tartary buckwheat production and processing enterprises in China.This study mainly selected 261 tartary buckwheat samples from the main tartary buckwheat planting areas in 17 counties(cities)in Liangshan prefecture from 2021 to 2023.The content of lead,cadmium,arsenic,mercury,and chromium in tartary buckwheat samples was strictly tested according to national standards,and evaluated based on the limit standards specified in GB 2762—2022.The commonly used heavy metal pollution assessment method was used to study and evaluate the heavy metal content in tartary buckwheat samples,and a risk assessment model combining single and composite hazard coefficient methods was used to assess the health risks of heavy metals in tartary buckwheat to humans.After evaluation,the health risks posed by the five heavy metal elements to the human body are relatively low,indicating that the overall safety status of bitter buckwheat in Liangshan prefecture is good.
