摘  要:目的:通过检测苏州工业园区市售鸭血产品中的动物源性成分,了解园区中鸭血产品是否存在动物源性掺假现象。方法:本研究采用多重PCR方法对鸭血样本进行定性筛查,并对结果异常样本采用相关动物源性的单重PCR方法进行二次复检,比对标签配料表信息,进行掺假分析和判定。结果:在所收集的86份鸭血样品中,共检出17份掺入鸡血,占总样本量19.7%;1份掺入猪血;1份为纯鸡血;1份与配料表信息不符,各占总样本量1.2%。结论:本文研究了目前苏州工业园区市场上鸭血产品的质量状况及常见掺假肉源种类,并为市场监管部门提供新的检测方法和监管思路。Objective:To investigate whether there is animal derived adulteration in duck blood products sold in Suzhou Industrial Park by detecting animal derived components.Method:This study used multiplex PCR to qualitatively screen duck blood samples,and used relevant animal derived single PCR methods for secondary retesting of samples with abnormal results.The label ingredient list information was compared for adulteration analysis and judgment.Result:Among the 86 collected duck blood samples,a total of 17 were found to contain chicken blood,accounting for 19.7%of the total sample size;only 1 sample was mixed with pig blood,1 sample was pure chicken blood,and 1 sample did not match the information on the ingredient list,each accounting for 1.2%of the total sample size.Conclusion:This article studies the quality status of duck blood products and common types of adulterated meat sources in the current Suzhou Industrial Park market,and provides new testing methods and regulatory ideas for market supervision departments.
