摘  要:糖皮质激素可促进家禽的生长发育,因此在养殖业中得到了普遍应用。然而,过量使用可能导致其在动物性食品中残留。若长期食用含有此类激素的肉类,可能会对人体健康造成严重危害。本文论述糖皮质激素的生理作用及其在动物性食品中的危害,并进一步介绍其在食品中残留的理化检测方法,以期为养殖业的规范发展提供参考。Glucocorticoid can promote the growth and development of poultry,so it has been widely used in the breeding industry.However,excessive use may lead to residues in animal foods.If long-term consumption of meat containing such hormones,it may cause serious harm to human health.This paper discusses the physiological effects of glucocorticoids and their harm in animal food,and further introduces the physical and chemical detection methods of glucocorticoids residues in food,in order to provide reference for the standardization development of aquaculture industry.
