摘  要:为探究树莓浆果在胃肠消化过程中生物活性物质释放量及消化液抗氧化能力的变化规律,采用体外模拟胃肠消化模型,对各阶段消化液中总类黄酮和总酚的含量及消化液自由基清除能力进行测定。结果表明,相较于未消化液,口腔及胃肠消化液中总类黄酮和总酚的含量均有所下降。总类黄酮物质在口腔消化环境中释放量(3.99 mg/g)显著高于胃消化(1.37~2.34 mg/g)和肠消化(0.96~1.56 mg/g),且随消化时间的延长,胃消化液中总类黄酮释放量呈增加趋势,而肠消化液中呈下降趋势。口腔消化液中总酚含量(1.25 mg/g)明显低于胃消化液和肠消化液;胃消化各阶段,消化液中总酚含量变化不稳定,30 min时总酚含量最高,达2.42 mg/g;肠消化阶段总酚释放量呈下降趋势,30 min时为最高,达1.93 mg/g。胃消化液ABTS^(+)·清除能力、DPPH·清除能力均高于肠消化液,且消化液ABTS^(+)·清除能力与其中总类黄酮含量呈显著正相关,相关系数为0.530;DPPH·清除能力和总酚含量间呈显著正相关,相关系数为0.695。To investigate the changes in the release and the antioxidant capacity of raspberry berries bioactive substances during gastrointestinal digestion,the contents of total flavonoids and total phenols,as well as the free radical scavenging capacity of digestive juice were measured using an in vitro simulated gastrointestinal digestion model.The results showed that the contents of total flavonoids and total phenols in oral and gastrointestinal digestive fluid were decreased compared with undigested fluid.The release of total flavonoids in oral digestion environment(3.99 mg/g)was significantly higher than that in gastric digestion(1.37~2.34 mg/g)and intestinal digestion(0.96~1.56 mg/g),and the release of total flavonoids in gastric digestive fluid showed an increasing trend with the extension of digestion time,and a decraesing trend inintestinal digestive fluid.The content of total phenol in oral digestive fluid(1.25 mg/g)was significantly lower than that in gastric digestive fluid and intestinal digestive fluid,and the changed trend is unsteady in gastric digestion and decreasing trend in intestinal digestion.The maximum of total phenol content was reached at 30 min of gastric digestion(2.42 mg/g)and 30 min of intestinal digestion(1.93 mg/g),respectively.ABTS^(+)·and DPPH·scavenging capacity of gastric digestive were higher than those of intestinal digestive.Moreover,ABTS^(+)·scavenging capacity of digestive fluid was significantly positively correlated with total flavonoid content(correlation coefficient was 0.530),and DPPH·was significantly positively correlated with total phenol content(correlation coefficient was 0.695)。
