摘  要:以玉米粉、大米粉、小麦粉、碳酸钙等为主要原料,研制挤压膨化高钙营养冲调粉。将大米粉添加量、小麦粉添加量、碳酸钙添加量作为考察因素,在单因素实验的基础上,结合响应面优化分析,得出挤压膨化高钙冲调粉的最佳配方。以玉米粉添加量100 g计算,大米粉添加量为53.1 g、小麦粉添加量为21.0 g、碳酸钙添加量为2.1 g,其他辅料固定用量为大豆油5 g、水5 g、玉米淀粉15 g。Extruded high calcium nutrition blending powder was developed with corn flour,rice flour,wheat flour and calcium carbonate as the main raw materials.The amount of rice flour,wheat flour and calcium carbonate were used as the investigation factors.On the basis of single factor experiment,combined with the response surface analysis experiment,the optimal optimization conditions of extruded high calcium blending powder were obtained.The optimum formula of the product was as follows:the amount of corn flour was 100 g,the amount of rice flour was 53.1 g,the amount of wheat flour was 21.0 g,the amount of calcium was 2.1 g,and the amount of other excipients was:soybean oil of 5 g,water of 5 g,corn starch of 15 g.
