摘　　要：为评定氧化还原滴定测定玉米油中过氧化值的测量不确定度,反映检测的置信度和准确度。采用《食品安全国家标准食品中过氧化值的测定》GB 5009.227-2023规定的过氧化值测定方法测定玉米油中的过氧化值。根据JJF 1059.1-2012《测量不确定度评定与表示》中的规定[1],通过对不确定度的主要影响因素进行分析,进行测量不确定度评定。实验结果表明,在实验中要提高滴定管读数的准确性并且要注意周围环境温度,尽量减少这些因素影响的不确定度。To evaluate the uncertainty of the measurement of the peroxide value in corn oil by REDOX titration,and reflect the confidence and accuracy of the detection.The peroxide value in corn oil was determined by the peroxide value determination method stipulated in GB 5009.227-2023 of"Determination of Peroxide Value in Food Safety National Standard".According to the provisions of JJF 1059.1-2012"Measurement Uncertainty Evaluation and Expression"[1],the measurement uncertainty evaluation is carried out by analyzing the main influencing factors of the uncertainty.The experimental results show that the accuracy of burette reading should be improved and the ambient temperature should be paid attention to in the experiment to minimize the uncertainty of these factors.
