摘 要:植物提取物是以天然植物为基础原料,通过一系列加工提取而成的一类具有生物活性物质的总称。植物提取物具有抗氧化、抗炎、免疫调节等多种生物学功能,因其具有环保高效的特点被广泛应用在动物生产领域中。在猪生产中,植物提取物对肉品质具有多种功效,包括改善滴水损失、剪切力、肉色、肌间脂肪、PH24h值等指标。本文总结了多酚类、萜类、生物碱类、多糖类等植物提取物的特点,并据此分类列举其在育肥猪生产中常用的植物提取物、添加量及其对肉品质的改善效果等,为植物提取物在猪生产中的应用提供参考。Plant extracts are a general term for a category of bioactive substances obtained from natural plants through a series of processing and extraction methods.These extracts possess a variety of biological functions,including antioxidant,anti-inflammatory,and immunomodulatory properties.Due to their environmentally friendly and efficient characteristics,plant extracts have been widely applied in the field of animal production.In pig production,plant extracts have a variety of effects on meat quality,including improving drip loss,shear force,meat color,intermuscular fat,pH24 h value and other indicators.This paper summarized the characteristics of plant extracts such as polyphenols,terpenes,alkaloids and polysaccharides,and listed the plant extracts commonly used in finishing pig production,the amount of addition and the effect on meat quality improvement,etc.,to provide reference for the application of plant extracts in pig production.
