摘　　要：饲养方式是影响羊肉品质的关键因素,为了实现优质优价、促进优质产业发展,针对不同饲养方式的羊肉开发一种有效鉴别方法十分必要。采用多维检测技术结合多元统计方法对鄂尔多斯细毛羊肉样品的色差、脂肪酸、氨基酸、矿物质元素、稳定同位素等指标进行综合分析,挖掘关键特征指标;同时,应用原位电离高分辨质谱技术对鄂尔多斯细毛羊肉样品气溶胶进行快速分析,在线识别饲养方式,两者相互验证,进一步提高鄂尔多斯细毛羊肉饲养方式识别的准确性和可靠性,初步建立了鄂尔多斯细毛羊肉饲养方式综合识别方法,为未来肉品质鉴别及进一步研究提供参考。Feeding methods are a key factor affecting the quality of mutton.In order to achieve high quality and reasonable price and promote the development of high-quality industries,it is very necessary to develop an effective identification method for mutton with different feeding methods.In this study,multi-dimensional detection technology combined with multivariate statistical methods was used to comprehensively analyze indicators such as color difference analysis,fatty acids analysis,amino acids analysis,mineral elements analysis,and stable isotope ratios of Ordos fine-wool sheep mutton to excavate key characteristic indicators.At the same time,in-situ ionization high-resolution mass spectrometry technology was used to rapidly analyze the aerosol of Ordos fine-wool sheep mutton and identify the feeding methods online.The two methods verify each other to further improved the accuracy and reliability of identifying the feeding methods of Ordos fine-wool sheep mutton.A comprehensive identification method for the feeding methods of Ordos fine-wool sheep mutton was initially established,providing a reference for future meat quality identification and further research.
