摘 要:选取2022年3—12月福建省3个地区的学生餐供应公司,收集200份学生午餐带量食谱,对能量、宏量营养素和食物种类及闽菜供应情况进行分析。结果表明:学生午餐能量合格率为42.5%,各类宏量营养素合格率为碳水化合物67.5%、脂肪62.5%和蛋白质0.0%;各类食物合格率为蔬菜类52.5%、谷薯类40.0%、蛋类35.0%、水产品32.5%、大豆类及其制品和坚果17.5%、畜禽肉类0.0%。不同地区脂肪和各类食物(除畜禽肉类)合格率间差异均有统计学意义(P值均小于0.01)。学生午餐中常见闽菜所含能量、蛋白质、脂肪和碳水化合物的供应量差异均有统计学意义(P值均小于0.01)。福建省部分地区学生餐供应公司提供的带量食谱基本能够满足学生生长发育所需,但仍存在能量、脂肪、蛋白质、畜禽肉类等供应过量,水产品、蛋类、大豆及其制品和坚果供应偏低等问题,应进行适当调整。From March to December 2022,school meals supply companies in three regions of Fujian Province were selected to collect 200 quantified recipes of school lunches.Energy,macronutrients,food types,and the supply of Fujian cuisine were analyzed.The results indicate that the qualified rate of school lunch energy is 42.5%.The qualified rates of various macronutrients were carbohydrates 67.5%,fats 62.5%,and proteins 0%.The qualified rate of various foods was 52.5%of vegetables,40.0%of cereals and potatoes,35.0%of eggs,32.5%of aquatic products,17.5%of soybeans and their products and nuts,and 0.0%for livestock and poultry meat.There were significant differences in the qualified rates of fats and various foods(excluding livestock and poultry meat)among different regions(P<0.01).Among the Fujian cuisine that was more commonly seen in school lunches,the differences in the supply of energy,protein,fat,and carbohydrates in Fujian cuisines are statistically significant.However,there were still problems such as excessive supply of energy,fat,protein,livestock and poultry meat,and deficiency of aquatic products,eggs,soybeans and their products and nuts,which should be adjusted appropriately.
