山桐子油微胶囊的制备及其氧化稳定性分析

摘  要:为提高山桐子油的氧化稳定性,以海藻酸钠与明胶为壁材,采用复凝聚法制备山桐子油微胶囊。以包埋率为指标,在单因素试验基础上,采用正交试验优化微胶囊的制备工艺条件,并对最佳工艺条件下获得的山桐子油微胶囊化产品进行氧化稳定性分析。结果表明:最佳制备工艺条件为壁材质量分数2.5%、壁材质量比1∶4、芯壁质量比1∶2、乳化剂添加量3%(以山桐子油质量计),在此工艺条件下微胶囊的包埋率达到80.49%。氧化稳定性分析表明,在常温下储藏30 d后,微胶囊的油脂氧化稳定性指数为(4.63±0.09)h,显著高于山桐子油,证实了微胶囊化可提高山桐子油的稳定性,延长其货架期。To improve the oxidation stability of Idesia polycarpa Maxim.oil,microcapsules of Idesia polycarpa Maxim.oil was prepared by complex coacervation method,using sodium alginate and gelatin as wall materials.Taking embedding rate as the indicator,the preparation process conditions of microcapsules was optimized by orthogonal experiments on the basis of single factor experiments.At the same time,the oxidation stability of the microencapsulated product of Idesia polycarpa Maxim.oil obtained under the optimal process conditions was analyzed.The results showed that the optimal process conditions were mass fraction of wall materials 2.5%,mass ratio of wall material 1∶4,mass ratio of core to wall 1∶2,and emulsifier addition amount 3%(based on the mass of Idesia polycarpa Maxim.oil).Under these process conditions,the embedding rate of microcapsules reached 80.49%.The oxidation stability analysis showed that after being stored at room temperature for 30 d,the oil oxidation stability index of microcapsules was(4.63±0.09)h,which was significantly higher than that of Idesia polycarpa Maxim.oil,it confirmed that microencapsulation could improve the stability of Idesia polycarpa Maxim.oil and extend its shelf life.
