摘 要:气候环境是影响一个地区能否酿造优质白酒的关键因素之一,独特的区域气候环境造就了优质白酒的“异地不可复制性”。该文从白酒产区气候环境特征入手,介绍了典型白酒产区的地理分布,气温、降雨量、相对湿度、日照时数、气压等影响白酒酿造的气候环境特性因子及白酒产区气候环境特性研究进展,为解析传统白酒酿造工艺与气候环境的本质联系提供参考思路,对提升酿造白酒的品质具有重要的意义。The climatic environment is one of the key factors that affect whether a region can brew high-quality Baijiu.The unique regional climatic environment creates the“Non-replicability in Other Places”of high quality Baijiu.This article starts from the climatic environment characteristics of the Baijiu producing regions and introduces the geographical distribution of typical Baijiu producing regions,the temperature,precipitation,relative humidity,sunshine hours,and air pressure,etc.,which are the climatic environment characteristic factors that affect Baijiu brewing,as well as the research progress on the climatic environment characteristics of Baijiu producingregions.This provides a reference for analyzing the fundamental connection between traditional Baijiu brewing techniques and climatic environment,and has importance for improving the quality of Baijiu brewing.
