摘  要:脂溶性维生素在食品营养体系中占据核心地位,其精准检测对于食品质量控制、营养标识规范化及消费者健康保障具有重要意义。本文系统综述了食品中脂溶性维生素的检测方法,涵盖传统的高效液相色谱法、气相色谱法,以及现代的液相色谱-质谱联用法、气相色谱-质谱联用法、核磁共振波谱法、免疫分析法、在线固相萃取-二维液相色谱法、微流控芯片技术和生物传感器技术等检测技术的研究进展和实际应用,旨在为食品行业相关检测工作提供技术参考。Fat-soluble vitamins,as crucial nutritional components in food,play a key role in human health.Accurately detecting the content and types of fat-soluble vitamins in food is of great significance for food quality assessment,nutritional label standardization,and safeguarding consumers’health.This article systematically reviews the detection methods of fat-soluble vitamins in food,covering research progress and practical applications of traditional detection techniques such as high-performance liquid chromatography and gas chromatography,as well as modern techniques like liquid chromatography-mass spectrometry,gas chromatography-mass spectrometry,nuclear magnetic resonance spectroscopy,immunoassay,online solid-phase extraction-two-dimensional liquid chromatography,microfluidic chip technology,and biosensor technology.The aim is to provide technical references for relevant detection work in the food industry.
