摘　　要：肉制品加工业是农副食品加工业中非常重要的一部分,而“肉制品生产技术”课程承载了肉制品行业未来的希望。如何通过教学改革来提升学生的学习兴趣、提高课程教学效果,帮助学生适应行业、企业及社会发展需求,是课程团队需要不断思考的问题。以江苏食品药品职业技术学院为例,从课程定位、课程目标、课程结构与内容、课程设计、思政设计、课程实施、考核评价7个方面分析了高职院校“肉制品生产技术”课程建设的情况,以便为同类院校该课程的建设提供参考。The meat product processing industry is a very important part of the agricultural and sideline food processing industry,and the Meat Product Production Technology course carries the hope for the future of the meat product industry.How to enhance students'learning interest,improve course teaching effectiveness,and adapt to the needs of industry,enterprises,and society through teaching reform is a question that the course team needs to constantly think about.The construction of meat product production technology courses in vocational colleges were analyzed from seven aspects:course positioning,course objectives,course structure and content,course design,ideological and political design,course implementation,and assessment evaluation,taking Jiangsu Food and Drug Vocational and Technical College as an example,in order to provide reference for similar colleges and universities.
