摘  要:小曲白酒中的两亲体自组装现象,始于白酒生产的蒸馏冷凝阶段,这一过程类似于热处理后混合体系因熵增而导致的自组装行为。针对含有不同风味物质的模拟酒样,采用多种表征方法研究小曲白酒中两亲性风味物质的自组装过程。原子力显微镜图像证实了两亲性风味物质之间的自组装行为。电化学阻抗谱显示,组装体的存在引起了体系阻抗谱虚部的变化。此外,拉曼光谱与分子动力学模拟的联合应用,进一步证实体系氢键强度的增强,表明模拟在白酒中形成了由氢键连接的自组装团簇。基于以上分析结果,可得出结论:乳酸乙酯对小曲白酒中的自组装过程影响最为显著。小曲白酒中两亲性风味物质的自组装机制,为研究者从分子水平上揭示白酒的陈酿机制提供了一个新的视角。The presented work proposed the self assembly of amphiphilic in Xiaoqu Baijiu occurs at the distillation and condensation stage of Chinese Baijiu production for the first time.Such phenomena is similar with the self-assembly accompanied with an entropy increase after thermal treatment of amphiphilic mixed system.Hydrogen-bonding interactions prompt the formation of molecular clusters in the system.Herein,the variation of dipole moment,hydrogen bond strength and cluster morphology in Xiaoqu Baijiu were characterized via electrochemical impedance spectroscopy,Raman spectroscopy,atomic force microscopy and molecular dynamics simulation.The effects of major aroma substances on the self-assembly of Xiaoqu Baijiu were systematically investigated.Ethyl lactate had the strongest effect on resulted self-assembled clusters.The molecular mechanism of the self-assembly of amphiphilic aroma in Xiaoqu Baijiu was explored in depth for the first time,which contributes novel insights and analytical approaches for understanding the aging mechanism of Baijiu on the molecular level.
