摘  要:糯米及相关制品的回生是其在储藏过程中品质劣化的主要原因。目前,回生的控制研究主要集中于食品领域,但相关措施的抑制效果仍不尽人意,且对糯米制品的食味品质存在一定影响。通过育种手段进行糯稻性状改良是解决糯米回生问题的根本途径。论述了糯米回生特性的影响因素,指出目前研究存在的主要问题,以期为低回生糯稻品种的选育和糯米类食品的生产加工提供借鉴。The retrogradation of glutinous rice and related products is the main reason for their quality deterioration during storage.At present,research on the control of retrogradation mainly focuses on the food industry,but the inhibitory effects of relevant measures are still unsatisfactory,and there is a certain impact on the taste quality of glutinous rice products.Improving the traits of glutinous rice through breeding methods is the fundamental way to solve the problem of glutinous rice retrogradation.This paper discussed the influencing factors of the retrogradation properties of glutinous rice and pointed out the main problems in current research,so as to provide reference for the breeding of low retrogradation glutinous rice varieties and the production and processing of glutinous rice food.
