摘  要:真菌毒素是由植物病原真菌在适宜条件下产生的有毒次级代谢产物,广泛污染粮食等农作物,我国每年因真菌毒素污染造成大量的粮食浪费和经济损失。对粮食中常见真菌毒素种类、污染现状和脱毒方法进行了归纳和总结,重点阐述了真菌毒素物理阻控和生物降解技术,旨在为真菌毒素污染粮食的综合安全利用提供思路,减少粮食损失浪费。Mycotoxins are toxic secondary metabolites produced by plant pathogenic fungi under suitable conditions,which widely contaminate crops such as grains.In China,mycotoxin contamination results in significant grain wastage and economic losses annually.This paper summarizes the common types of mycotoxins in grains,the current status of contamination,and detoxification methods.And the physical prevention and control measures and bio-degradation tech-nologies of mycotoxins were mainly discussed,in order to provide ideas for the comprehensive and safe utilization grain contaminated with fungal toxins,and reduce grain loss and wastage.
