摘 要:为探究对香豆酸/壳聚糖涂膜处理对‘突尼斯’‘阿娜尔’‘皮亚曼’3种石榴贮藏品质和抗氧化能力的影响,以最佳浓度的对香豆酸/壳聚糖溶液对石榴进行涂膜处理,分析其在(4.0±0.5)℃、相对湿度85%~90%下贮藏期间对照组与涂膜组石榴的贮藏品质、总酚含量、多酚氧化酶(PPO)活性、过氧化物酶(POD)活性的变化。结果表明:与对照组相比,涂膜处理能有效提高石榴自身的抗氧化活性,降低其失重率,抑制PPO和POD活性。相同涂膜处理下,‘突尼斯’石榴果皮更易褐变,总酚含量下降明显,60 d时果皮PPO活性最高,达2.81 U/(min·g),而其籽粒PPO活性与另外两品种相比较低,且不易褐变;‘皮亚曼’石榴果皮褐变程度最轻,但其籽粒在贮藏60 d时PPO活性最高,达1.77 U/(min·g),更易发生酶促褐变;‘阿娜尔’石榴果皮、籽粒褐变程度居中。综上所述,涂膜处理可提高石榴的抗氧化能力,其更适合‘皮亚曼’石榴保鲜和‘突尼斯’石榴的籽粒保鲜,本研究为开发石榴保鲜新方法提供了技术支撑。To investigate the effects of p-coumaric acid/chitosan coating treatment on the storage quality and antioxidant capacity of‘Tunisia’,‘Anar’,and‘Piaman’pomegranates,the optimal concentration of the p-coumaric acid/chitosan solution was used to coat pomegranates.The storage quality,total phenols content,polyphenol oxidase(PPO)activity,and peroxidase(POD)activity of pomegranates in the control and coating groups during the storage period((4.0±0.5)℃,RH 85%~90%)were analyzed.The results showed that compared with the control group,the coating treatment effectively improved pomegranates’antioxidant activity,reducing the weight loss rate and PPO/POD activities.Under the same coating treatment,the peel of‘Tunis’pomegranate was the most prone to browning,with a significant decrease in total phenol content.The PPO activity in the peel was up to 2.81 U/(min·g)at 60 days,while PPO activity in the grain was lower and less prone to browning than the other two varieties.The peel browning of‘Piaman’pomegranate was the lightest,but the PPO activity in the grain was up to 1.77 U/(min·g)after 60 days of storage,and enzymatic browning was more likely to occur.The browning degree of‘Anar’pomegranates’peel and seed was medium.In summary,coating treatment can improve the antioxidant capacity of pomegranate,which was suitable for the preservation of‘Piaman’pomegranate and‘Tunisian’pomegranate seed.This provides technical support for the development of pomegranate preservation.
