摘　　要：玫瑰含有多种营养成分,作为食品加工的重要原料,已被广泛应用于食品及功能性食品的开发中。本文概述玫瑰的营养价值、功能成分及其加工应用现状,以期为玫瑰深加工产业高质量发展提供理论依据。Roses contain a variety of nutrients and are used as an important ingredient in food processing and have been widely used in the development of food and functional foods.This paper summarizes the nutritional value,functional components and processing and application status of roses,in order to provide a theoretical basis for the high-quality development of the deep processing industry of roses.
