摘 要:食品安全与健康问题一直受到全球的广泛关注,其中高脂饮食引发的脂代谢紊乱是重点关注的问题之一。随着现代微生物学技术的发展,食品中的益生菌成为研究热点,研究者们发现这些益生菌及其代谢物在调节脂代谢紊乱过程中发挥着重要的作用,益生菌的发酵产物包括外泌体、有机酸、短链脂肪酸和细菌素等。人们将这些益生菌及其代谢产物添加到食品中,追求更加健康的饮食方式。随着研究的不断深入,益生菌调节脂代谢紊乱的作用机制也不断被揭示,有研究表明益生菌通过激活AMPK信号通路调节脂肪的合成与分解,并通过TLR4-NF-κB信号通路调节肠道的通透性,保护肠道屏障,益生菌对肠道菌群结构和全身炎症反应具有积极影响。文章综述了食源性益生菌及其代谢物调节脂代谢紊乱的潜在机制和益生菌在食品中的应用。Food safety and health issues have been widely concerned worldwide,among which,lipid metabolism disorder induced by high-fat diets is one of the key concerns.With the development of modern microbiological technology,probiotics in food have become a research hotspot.Researchers have found that these probiotics and their metabolites play an important role in regulating lipid metabolism disorder,and the fermentation products of probiotics include exocytosis,organic acids,short-chain fatty acids and bacteriocins.People pursue a healthier diet by adding these probiotics and their metabolites into foods.With the continuous deepening of research,the mechanism of action of probiotics regulating lipid metabolism disorder has been revealed.Some studies show that probiotics regulate the synthesis and catabolism of fat by activating the AMPK signaling pathway,regulate intestinal permeability via the TLR4-NF-κB signaling pathway and protect the intestinal barrier.Probiotics have a positive effect on the structure of intestinal flora and systemic inflammatory responses.In this paper,the potential mechanism of foodborne probiotics and their metabolites regulating lipid metabolism disorder and the application of probiotics in food are reviewed.
