摘  要:即食食品包装材料中的化学迁移物可能通过接触食品迁移到食品中,影响食品感官特性,甚至危害人体健康。针对即食食品包装材料中化学迁移物的风险评估与控制策略展开研究,分析了食品包装材料的分类以及常见迁移物质的来源与特性,探讨了迁移物的物理化学特性对迁移行为的影响。基于危害识别、暴露评估和毒性评估的风险评估流程,提出了选择符合标准的安全材料、优化生产工艺、采用多层结构材料及合理设计包装形状等综合控制策略。结果表明:通过科学的风险评估和有效的控制措施,可显著降低化学迁移物对食品安全的潜在威胁,为即食食品包装材料的安全性监管和产业发展提供科学依据。Chemical migration substances in ready-to-eat food packaging materials may migrate into food through contact,affecting its sensory characteristics and even endangering human health.A study was conducted on the risk assessment and control strategies for chemical migration substances in ready-to-eat food packaging materials.The classification of food packaging materials and the sources and characteristics of common migration substances were analyzed,and the influence of the physical and chemical properties of migration substances on migration behavior was explored.Based on the risk assessment process of hazard identification,exposure assessment,and toxicity assessment,comprehensive control strategies were proposed,including selecting safe materials that meet standards,optimizing production processes,using multi-layer structural materials,and designing packaging shapes reasonably.Research has shown that through scientific risk assessment and effective control measures,the potential threat of chemical migration to food safety can be significantly reduced,providing a scientific basis for the safety supervision and industrial development of ready-to-eat food packaging materials.
