摘　　要：本文综述了机械化黄酒的创新发展历程,传统工艺糖化发酵剂在机械化黄酒发展进程中的创新应用,以及机械化黄酒遇到的品质问题及应对措施。传统黄酒酿制技艺与机械化黄酒生产深入融合是产业的重要发展方向。This article introduces the development and innovation course of the mechanized brewing technology of Huangjiu,the innovative applica-tion of traditional saccharification and fermentation agents in the development course of the mechanized brewing technology of Huangjiu,and the problems and corresponding measures of the mechanized brewing technology of Huangjiu.The deep integration of the traditional Huangjiu brewing technology and the mechanized brewing technology is an important development direction of the industry.
