摘  要:分别考察了α-生育醌(α-TQ)在甲醇体系和油脂体系中的抗氧化性能,推测其抗氧化机理。结果表明:在甲醇体系中,随着α-TQ质量浓度的增加,α-TQ对DPPH、ABTS自由基的清除率增大,当α-TQ质量浓度为8.0 mg/mL时,二者自由基清除率分别可达49.26%和66.69%,其EC_(50)分别为8.14 mg/mL和4.97 mg/mL。在3种剥离油脂(油酸型、亚油酸型和亚麻酸型油脂)中,随着α-TQ添加量的增大,抗氧化效果增强;随着温度升高,抗氧化效果减弱;在油酸型油脂中的抗氧化效果最强,其次是亚油酸型,亚麻酸型最差。The antioxidant properties of α-tocopherol quinone(α-TQ) were investigated in methanol and oil and fat systems respectively, and the antioxidant mechanism was supposed. The results showed that the scavenging rate of α-TQ on DPPH and ABTS free radicals increased with the increasing of mass concentration of α-TQ in the methanol system, and when the mass concentration of α-TQ was 8.0 mg/mL, the free radical scavenging rate of both reached 49.26 % and 66.69 %, and the EC_(50) values were 8.14 mg/mL and 4.97 mg/mL, respectively. The antioxidant effect was enhanced with the increase of the additive amount of α-TQ in the three types of stripped oil and fat(oleic acid-type, linoleic acid-type and linolenic acid-type oil and fat),while the antioxidant effect was weakened with the increase of the temperature. The oleic acid-type oil and fat exhibited the strongest antioxidant effect, followed by the linoleic acid-type, while the linolenic acid-type was the least effective.
